   Our journey began with Sushi Express, our downtown location known for quick, high-quality sushi on the go. As our passion for fresh, flavorful sushi grew, so did our commitment to making it more accessible. That’s why we launched Fin Sushi, with locations on Madison’s west side—and soon in Sun Prairie—offering the same exceptional quality in a fast-casual setting.

   Expanding beyond sushi, we introduced Poke Bay, bringing fresh, customizable poke bowls to the community. With locations in Fitchburg/Verona and Madison, Poke Bay continues our mission of offering healthy, sustainable, and flavorful meals made with responsibly sourced seafood and farm-fresh ingredients.
